Creamy Cajun Chicken Alfredo with Fettuccine Pasta

Ingredients:

For the Cajun Chicken:

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, sliced into thin strips

1½ tablespoons Cajun seasoning (adjust to heat preference)

½ teaspoon salt (or to taste)

½ teaspoon black pepper

For the Alfredo Sauce:

2 tablespoons unsalted butter

3 cloves garlic, minced

2 cups heavy cream

1 cup freshly grated Parmesan cheese

½ teaspoon onion powder

Salt and black pepper to taste

For the Pasta:

12 oz fettuccine pasta

Water and salt for boiling

Optional Garnish:

Fresh chopped parsley

Extra grated Parmesan

Directions:

Cook the pasta:
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente (typically 10–12 minutes).
Drain the pasta, reserving ½ cup of the pasta water, and set aside.

Season and cook the chicken:
While the pasta cooks, season the sliced chicken breast with Cajun seasoning, salt, and black pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the seasoned chicken in a single layer and cook for 5–7 minutes, turning as needed, until the chicken is browned and cooked through.
Remove the chicken from the skillet and set aside on a plate. Cover loosely to keep warm.

Prepare the Alfredo sauce:
In the same skillet, reduce heat to medium and melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream, stirring frequently. Allow it to heat for 2–3 minutes until it begins to gently simmer.
Stir in the Parmesan cheese and onion powder. Mix until the cheese is fully melted and the sauce is smooth.
Season with additional salt and pepper to taste. If the sauce is too thick, add a few tablespoons of the reserved pasta water to thin it slightly.

Combine everything:
Return the cooked fettuccine to the skillet and toss with the Alfredo sauce until evenly coated.
Add the cooked Cajun chicken on top and toss gently to combine. Let it sit over low heat for 1–2 minutes so the flavors blend together.

Serve:
Plate the creamy Cajun chicken Alfredo pasta in bowls or on a serving platter.
Garnish with chopped parsley and more Parmesan if desired. Serve immediately.
